Tasty Tuesday - Crab and Corn Chowder
I am participating in Tasty Tuesday and Tempt my Tummy Tuesday today! It's rare I remember to take a picture of what I'm cooking but I actually did on Sunday.
One of OnlySon's favorite things (while living at home) was Crab and Corn Chowder. He shared a March 3 birthday with my paternal grandmother. Crab and Corn Chowder and Crawfish Etouffee were usually on the menu for their shared parties. Italian Cream Cake was the dessert but we'll save that for another time!
Crab and Corn Chowder is so easy to make and is so yummy on a cold winter day. Keep the basic ingredients on hand and it's a quick and easy meal to throw together.
Crab and Corn Chowder
1/2 cup chopped green onions
2 cloves garlic, chopped
2 Tbsp. butter
Red pepper to taste
2 cans cream of potato soup
1 soup can fat free half and half
2 soup cans milk (any %)
12 ounces cream cheese (I use low fat)
3 cans flaked crab meat
1 bag frozen corn, slightly cooked
Saute green onions and garlic in butter until tender.
Soften cream cheese in microwave. It will stir in much easier. Add remaining ingredients. Heat thoroughly. Serve with cornbread or french bread.
